As an older person we tend to eat a bit less, cook more infrequently, and not get the store as often as we used to. However, we still need to eat right? What seniors need are some simple recipes that take very little time to prepare, like these:
Hummus Wrap:
Place a large tortilla in a convection over at 300 degrees for three minutes. Dice a quarter of a cucumber, half a tomato and a handful of black olives. Break up some spinach into small pieces. Once the tortilla has been warmed, take it out of the convection oven and fill it with the vegetables that you just diced, including the spinach. Place them in the center of the tortilla. Then put a couple spoonfuls of hummus on top of the vegetables. Fold the sides of the tortilla inwards on the left and right. Then pull the bottom section over to wrap the fillings in the middle. Roll the tortilla forward to complete the wrap.
Veggie Burgers:
Put some olive oil in a frying pan and place two veggie burgers onto the oil. Cook the veggie burgers on medium heat for five minutes or until they are warmed in the center. Toast two hamburger buns, face open, in a convection oven. Once they are browned, put your condiment of choice onto one side of each bun. Mustard, ketchup and mayonnaise are recommended. Place the veggie burgers on the other side of the buns and put a few leaves of romaine lettuce or spinach on top. Combine with the other end of the buns.
Tortilla Wrap Pizza:
Place a large burrito size tortilla on a plate. Put three or four large spoonfuls of sauce in the center. Then take a handful of cheese (about a half a cup) and sprinkle it over the sauce. Dice your favorite pizza toppings and place them on top of the cheese. Then fold the left and right sides of the tortilla inwards towards the center. Pull the bottom part of the tortilla over the fillings and roll it forward. Place the completed pizza wrap on top of a paper towel or paper plate. Cook the pizza wrap in the microwave for a minute or until you notice any sauce or cheese beginning to leak out.
Minute Rice With Diced Vegetables:
Put a packet of minute rice into the microwave and follow the cooking directions on the box. While the rice is cooking, dice half a cucumber. Take a handful of spinach, wash it thoroughly and tear it into small pieces. Once the rice has completed cooking, empty it into a bowl. Mix in the cucumber and spinach. Add soy sauce.
Enchiladas:
Purchase a frozen burrito. Place it onto a microwaveable safe plate. Pour your favorite salsa over the top of the burrito until it spills over its sides. Sprinkle your favorite cheese on top of the salsa in order to cover the entire surface area of the burrito. This creates an enchilada. Microwave your enchilada as directed by the frozen burrito’s wrapper.
